The Salicornia restaurant is in front of the port. Every morning it selects the best seafood, the basis of a cuisine that highlights and updates traditional Mallorcan recipes. Fresh grilled fish is its star dish.
We select the best fish and seafood from the very same south of the island, such as lobster or rock octopus, the absolute focus of any of our dishes.
Pablo Tomás is the chef at Salicornia and is also in charge of Sintonía, the restaurant at Hotel Gallery Barcelona. He has previously worked in the kitchens of El Bulli, Arzak, Drolma and Via Veneto, all Michelin-starred restaurants.
